Quiche
I've just made two carrot quiches! They are in the oven now. I found out last week that my blood pressure is very high, so I'm trying to lower my sodium intake, which is trickier than I imagined, especially if I want to actually EAT! But quiche as I make it is relatively low-sodium... plus, it's really delicious!
I'm really glad my dad made me cook dinner once a week when I went to live with him as a teenager. I hated it at the time, as it seemed really hard, but it taught me how to cook and gave me at least a few recipes in my repertoire when I went off to college. Quiche is one of the originals... I've been making it now for 18 years (gosh, that makes me feel old!), and I still love it. I used to make it with spinach, but I've found I like carrot better. While I was with Steve, I passed on some of my recipes to him, and now he makes carrot quiche too! In fact, he's making it tomorrow night when he has guests to dinner.
Hooray for quiche!
